Unbaked Blueberry Cheesecake

份量:500克 (直接乘以2或3,如果你要1KG或1.5KG。除非你要不一样的重量可以通知我,我再帮你计算过)

用具:一个7吋可以脱底的蛋糕模子或专用慕思框。PREPARE ONE 7 INCH BOTTOM LOOSE MOULD OR MOUSSE RING.

提示:不要用烧水来泡吉利丁粉因为会导致它失去凝固效应。正确方式是用冷水泡吉利丁粉至吉利丁粉吸收水份后才用隔水方式蒸溶它。TIPS: Do not use hot water to soak the gelatin powder because it may loose the coagulate. You should use cold or plain water to soak the gelatin powder for 3mins then just use double boiled to melted the gelatin.

起司底部 / CHEESE CAKE BASE:

材料:

(A)
Oreo饼干  100克
OREO BISCUIT 100GM
溶化牛油     27克
MELTED BUTTER 27GM

 (B)
淇淋起司 120克
CREM CHEESE 120GM
幼糖                       25克
FINE SUGAR 25GM

(C)
植物性鲜奶油  142克 (可以切换成动物性鲜奶油)
NON DAIRY CREAM  (YOU MIGHT CHANGE TO UHT WHIPPING CREAM 

(D)
吉利丁粉  7克
GELATIN POWDER 7GM
清水        33克
PLAIN WATER  33GM

(E)
Oreo饼干  47克 (弄碎)
CRUSH OREO BISCUIT  47 GM (YOU MAY ADD MORE IF U LIKE MORE OREO)



做法/METHOD:

1. 将(A)里面的Oreo饼干预先弄碎放入碗里,然后将溶化牛油加入搅拌均匀后把它放进慕思框压平即可,然后放进冰箱冷藏1小时至硬。
CRUSH THE INGREDIENT (A) FIRST AND PUT IN CLEAN BOWL, THEN ADD IN MELTED BUTTER AND MIX TIL WELL COMBINED AND PRESS THE MIXTURE INTO A MOULD RING AND FREEZE FOR 1 HOUR.

2. 将材料(B)放入搅拌碗,用中速搅拌至鬆发。
THEN ,ADD INGREDIENT (B)INTO A BOWL, USE MEDIUM SPEED MIX TIL FLUFFY.

3. 再来,把解冻的植物性鲜奶油倒入起司糊里继续一中速搅拌至全部材料混合均匀。
AFTER THAT, POUR THE WHIPPING CREAM INTO CREAM CHEESE MIXTURE AND CONTINUE WHISK TIL ALL COMBINE WELL.

4. 把起司糊放在一旁待用。将材料(D)隔水溶化后再加入起司糊里,轻轻搅拌均匀即可
 SET ASIDE THE CREAM CHEESE MIXTURES. ADD THE GELATINE POWDER IN PLAIN WATER A WHILE , AND USE DOUBLE BOILED METHOD TO MELT THE GELATINE POWDER MIXTURE.
AND, POUR IN INTO CREAM CHEESE MIXTURE AND USE SPATULA TO MIX ALL WELL COMBINED.
5.最后把材料(E)倒入起司糊及轻轻搅拌均匀即可把起司糊倒在收藏在冰箱里的oreo底层上,弄均匀后冷藏至少3小时候,移出模子即可享用。
LAST, ADD IN THE CRUSHED OREO BISCUIT, MIX WELL AND POUR THE MIXTURE ON THE BASE WHICH YOU ALREADY FREEZE AND FREEZE AGAIN AT LEAST 3 HOURS BEFORE SERVING! 

Tips:可以在成型后的oreo起司蛋糕上涂上一层Topping Jelly及排上新鲜水果做装饰,蛋糕旁可以以oreo饼干做装饰或巧克力米等。。。。YOU MIGHT DECORATE THE CAKE BEFORE SERVING!
